How to Cook Dinakdakan with Mayonnaise


Hi Foodies! Today, I will share a food recipe that you may find exotic! Today, I cooked Dinakdakan! It is a traditional Ilocano dish from the Philippines. It is made from grilled pig's ears and cheeks, yup, you've read it right, the main ingredient is the pig's face that we usually call "maskara".

It is mixed with onions, chili, and other spices. The meat is then sliced and formed into small balls or bite-sized pieces before being grilled. It is typically served as an appetizer or a main dish and is often paired with rice and other vegetables. And to add a creamy and tangy twist, this recipe includes the addition of mayonnaise, which creates a unique and delicious combination of flavors. 

Here's how the dish came together:

  • 1 lb pig's ears and cheeks, cleaned and sliced
  • 1 onion, finely chopped
  • 2 chili peppers, sliced
  • 2 cloves of garlic, minced
  • 2 tbsp fish sauce (patis)
  • 1/4 cup mayonnaise
  • Salt and pepper to taste

Instructions:

  1. I grilled the pig's ears and cheeks until tender and slightly charred. A little char is important as it gives flavor!
  2. Let it cool and then finely chop it.
  3. I combined the grilled pig's ears and cheeks, onion, chili peppers, garlic, fish sauce, mayonnaise, salt, and pepper in a mixing bowl.
  4. Mixed well and I adjusted the seasoning to taste.
  5. I served it on a plate and garnished it with green onions and chili peppers.
  6. Enjoy your Dinakdakan with mayonnaise!
