In recent years, food scientist have discovered that they can increase the protien content in bread by using other flours in addition to wheat flour. For example, the use of some soy flour in bread adds protein to it. In addition, when 15 percent of tje wheat flour is replaced with flour made from ground peas, the protein content of the mixture is also raised by 15 percent.

Breads made with some peanut flour contain twice as much protein as most wheat breads. The use of pea flour or peanut flour does not change the flavor or texture of the bread.

Although many of these breads are still in the testing stages, high protein bread may eventually be one solution to the worldwide problem of inadequate proein in diets.
