Paprika is the ground powder of a pepper plant. It is bright red and varies in flavor from mild to very hot. Paprika is the characteristic spice in Hungarian cooking. When this well-known Chinese dish is prepared, the duck is first basted with a honey mixture and roasted. Then the crisp skin is taken off and cut into small pieces.
