Chicken Cordon Bleu The phrase cordon bleu (kôrdon' bloe') means "blue ribbon" in French and was once the symbol of high military honor. It later came t omean excellence in cooking. One of France's most famous cooking schools took this as its name. Chicken cordon bleu originated there.
