How to Make Chicken Creole

If you are looking for an Italian dish with yummy tomato sauce with chicken, chicken creole is good for you. This recipe is packed with nutrients that will make you healthy, it is full of fresh vegetables and chicken. It also has antioxidants that will make you look younger!

Ingredients
  • 4 chicken breasts
  • 15 ml (1 tablespoon) rosemary
  • 60 ml (1/4 cup) oil
  • 12 fresh okra
  • 80 ml (1/3 cup) vinegar
  • 1 onion
  • 2 garlic cloves
  • 5 ml (1 teaspoon) oregano
  • 450 g (1 pound) stewed tomatoes
Direction
  1. Skin chicken breasts. Sprinkle with rosemary.
  2. Heat oil in a large skillet and brown chicken.
  3. Cut tips and ends off okra. Slice remaining okra into small pieces.
  4. Heat vinegar in a small sauce pan. When it begins to boil, add okra and cook for 10 minutes, stirring frequently.
  5. Pour off vinegar. Place okra in a strainer and rinse with water for about 30 seconds.
  6. Peel onion and garlic. Chop both. Wash green pepper and cut off top and bottom. remove seeds and membrane. Cut remaining green pepper into 2.5 centimeter ( 1-inch) pieces.
  7. Place chicken breast side up in an 8" by 10" ovenproof casserole dish.
  8. Combine all other ingredients in a bowl and pour over chicken.
  9. Bake at 177° (350°F) fir 1 hour and 15 minutes. Yield: 4 servings.
