How to Cook Mojo Potatoes

  


 Hi Foodies! You are maybe familiar with mojo potatoes as they were popularized by one of the famous pizza chains, Shakey's. But did you know? Original Mojo potatoes are a traditional Cuban dish made with boiled and mashed potatoes that are mixed with a tangy, citrus-based marinade called "mojo." And today, I am going to share this flavorful appetizer.

To make Cuban mojo potatoes you will need these ingredients:

  • 4 medium-sized potatoes, peeled and diced
  • 1/4 cup olive oil
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 2 cloves of garlic, minced
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Boil the potatoes in a pot of salted water until they are fork-tender. Drain and mash them.
  2. In a separate bowl, mix together the olive oil, orange juice, lime juice, garlic, cumin, salt, and pepper.
  3. Pour the marinade over the mashed potatoes and stir until well combined.
  4. Allow the potatoes to marinate for at least 30 minutes before serving.
  5. Enjoy the mojo potatoes as a side dish or as a topping for sandwiches or tacos.
  6. Note: The recipe can be adjusted to your taste. Adjust the acidity or salt and pepper as per your taste.
