How to Cook Water Spinach(Kangkong) Salad with Salted Egg

To cook Water Spinach salad with salted egg, you will need the following ingredients:

  • 1 bunch of Water Spinach
  • 2 salted eggs(Optional but recommended!)
  • 2 cloves of garlic, minced
  • 2 shallots, minced
  • 2 red chili peppers, sliced
  • 2 tablespoons of fish sauce
  • 1 tablespoon of sugar
  • 1 tablespoon of lime juice
  • 1/4 cup of chopped cilantro

Instructions:

  1. Rinse the Water Spinach(Kangkong) and blanch it in boiling water for about 1 minute. Drain and set aside.
  2. Peel and mash the salted eggs.
  3. In a pan, sauté the garlic and shallots until fragrant. Add the mashed salted eggs and chili peppers, and stir-fry for a few minutes.
  4. In a separate bowl, mix the fish sauce, sugar, and lime juice to make the dressing.
  5. Add the blanched Water Spinach(Kangkong) to the pan with the salted egg mixture and toss to combine.
  6. Pour the dressing over the Water Spinach(Kangkong) and toss to coat evenly.
  7. Transfer the Water Spinach(Kangkong) to a serving plate and sprinkle it with chopped cilantro.
  8. Serve immediately and enjoy your Water Spinach(Kangkong) salad with salted egg!
